    You sir, are definitely correct…!! There must be a conspiracy between all sweet martabak vendors for not letting out their secret recipe. This a crime and should be punishable by law……:D PS: some people says that the secret is on the camel branded butter (or oil or whatever) that they use.

    I’ve now posted my question on The Jakarta Post’s Facebook site. Surely somewhere there will be able to solve this problem for us. I was thinking of going directly to the paper, but this is much more convenient for me. However, if I get no answer, I’ll be trying the paper and their Online website. I left Indonesia sixteen years ago, and it’s about time that I get this issue resolved. Until then, Syria and Immigration Reform will have to go on Hold.

    I’ve tried Martabak Manis from Bali, Jambi and Bandung and all of them taste better than homemade, we can’t duplicate it at home for some reason. The real Martabak Manis recipe must be some closely guarded secret somehow. My wife is Indonesian and we live in Texas so we’re constantly searching the web for a good recipe and how to cook it to taste original like you can get from the street vendors, to no avail. We’ve also tried using different pans, as well as an authentic Martabak skillet. 🙁

    Thanks for the warning. Knowing that, I certainly won’t be wasting my time with your recipe. However, your point about “homemade” is amusing. To someone who didn’t know better, the carts that I refer to would be some sort of elaborate kitchen factories. No, people, they’re just little push carts with much less equipment than the average home kitchen. Why their culinary achievements can’t be duplicated in the home remains a mystery to me.

    How does this compare with what you can buy from the carts on the north side of Jl. Juanda to the east of Jl. Hayam Wuruk? I’ve had several people tell me that it’s just not possible to duplicate what the carts sell. I don’t know why, but that seems to be the case.

    If you want to make it evenly cooked. Pour a tea cup of water when all the ingredient almost cooked. Turn the heat low. Let all the water evaporated. Enjoy!! Another tips is try to cooked all the ingredient for about 3 minutes and then puree it. It’s a fresher kind of sambal.
