I see them now for .50 to .75 U.S. dollars. But you can get them for much cheaper than that if you go to the right place. We get many for free from relatives who have trees on their property.

Yes, crush the lemongrass before chopping. It’s easier than if you chop it first and crush it one by one.

I would put in the chili paste after you bring the broth to a boil then do all those things then I would either cut or chop the chili’s and put them in I would add salt and pepper then add fish sauce and then put in the chopped cilantro and stir in lightly while turning the heat off

The best way to open the coconut is by Muay Thai elbow or a Thai roundhouse kick. That gives it authentic flavor to this traditional Thai dish.

-Fresh galangal
-10 thin slices (ginger actually works)
– single stock of lemon grass
-1 inch and half crush them
-5 Kaffir lime leaves (if not found adding more lime juice actually works)
-Head-off shrimp, cleaned (amount as desired)
-1 cup of chicken stock (preferred over broth but broth also works)
-1 cup of sliced mushroom
-1/2 cup coconut juice
-1.5 tbs chili paste (I prefer mild sweet)
-2 tbs fish sauce
-2.5 tbs lime juice
-1/4th cup milk (extra)
2 chili pepper tm fan

I’ve made this recipe with a few alterations. I boiled the beans (simmered) for close to 2 hours and I had to bake them between 3 and 4 hours. For me, the took a lot longer than suggested to get them nice and tender. Thanks Chef John, the flavor was amazing!
