It is salted water! No extra salt to the dish, but always good to season the water 🙂

I think he said sorted water as he mentioned not to add anymore salt thanks to the soy sauce.

Use ‘Arrowroot’ instead of cornflour. It does the same thing, but when it thickens it becomes clear letting the colour come through, whereas I find the cornflour mixture stays cloudy.

You can replace it but it won’t quite as sticky!

and I was like “But what is sorted water? is it regular water? does it have Ben’s hair in it or something!?”

This looks so good and is so much easier and cheaper self-made. If you want to give the sauce a nice healthy twist, try freshly squeezed orange juice, gives a whole new dimension to the flavour of the sauce.

Just bought all the ingredients to make this tomorrow! I spent a ridiculous amount of time looking for corn flour before I realized its the same thing as corn starch, though. Lol! Anyway, gonna try it with sugar snap peas instead of bean sprouts, since I can’t ever find bean sprouts in my area.
