    Not exact – when you have a solution of two liquids, the liquid with the higher concentration will actually evaporate much faster. According to the FDA, depending on temperature and surface area,you need to simmer a liquid for about 3 hours to get rid of most of the alcohol, and even then, you’ll probably have about 5% of the alcohol left.

    Actually you’re both wrong. There is no intensification of the alcohol ratio neither full evaporation due to the different boiling points. Ethanol will evaporate at a different rate, that’s the key to understand why there will be remaining alcohol in finished food, but always in a lower ABV than in the original beverage itself. Search the Wikipedia article (and the sources therein) on “cooking with alcohol->alcohol in finished food”.

    Still, its quite annoying. I think Chef Pierre would be better off starting his own brand and not using these cubes. I hate that he doesn’t use salt and pepper for seasoning but instead uses these unhealthy things :/
