Could you also dice the potatoes up smaller for a shorter cooking time and more surface area for seasoning?

Chef John doesn’t use extra virgin olive oil in this recipe. Also the lighter the olive oil is the higher the smoking point is. Highest quality extra virgin olive oil has very low smoking point compared to light olive oil. Long story short dont heat extra virgin olive oil.

thats true, ive heard that before as well, i dont tend to heat my extra virgin so much

because of you, chef john, i put cayenne in like everything and anything possible.

Where did you learn that bullshit fucktard. Extra virgin olive oil has much lower smoking point then light olive oil, if you don’t believe me check it from e.g. Wikipedia and if you’re not stupid asshole you’ll admit tat you were wrong and I was right.

  20. CleverDjembeSeptember 24, 2013 at 2:10 pmReply

non-virgin olive oil has an even lower smoking point and you’re creating harmful free radicals by bringing oil over its smoking point, seppo asshole.

  21. Seppo KorhonenSeptember 24, 2013 at 2:24 pmReply

He doesn’t use extra virgin olive oil in this recipe. Next time try to think little before you write something so fucking retarded.

  22. CleverDjembeSeptember 24, 2013 at 2:54 pmReply

Extra virgin OLIVE OIL smoking point is 375 fahrenheit (405 for the highest quality oil) and you’re using 400!??? WARNING: DO NOT TRY AT HOME!
