Prague powder #1 or #2? I assume you mean #1 because you only mention sodium nitrite as the substitute (and not sodium nitrate also). Also, how is it possible to substitute Prague powder with sodium nitrite? Prague powder is over 90% salt and less than 10% sodium nitrite.
Gano po katagal can we keep curing the meat in the fridge? Yung pinaka-matagal po then after that hindi na pwede kainin yung tocino? Or dapat na lang siya i-freeze?
