    Why dont u just use tamarind sauce like the original pad thai? Dont think its any fatter than peanut butter. And we usually use bean sprouts and tofu. I know ur going for a healthier version but u cant really this pad thai :((

    Though my last comment may make me seem insane, I do have one constructive tip: steaming shirataki noodles gives them a texture closer to that of egg noodles. Though pad Thai is made with rice noodles, the lack of nam pla and tamarind in this recipe indicates to me that authenticity is wholly unimportant in this context. A traditional pad Thai sauce contains fewer calories than the sauce presented here, due its peanut butter content.

    Those noodles do not digest. Too often have I purged them into a bag, only to see whole noodles. They don’t break down in stomach acid, even after a number of days.

    I was raised on shirataki noodles because my mom made it a lot and WOW. This recipe was amazing! I didn’t mind the texture and the taste was delicious!!!

    Cassey, truly thank you so much for this recipe! It taste so good and is really filling! With my husband being Vietnamese we eat a lot of noodle dishes, but I’m always left feeling really guilty after. So I can’t wait to try making other dishes with these noodles.
