    I think you mean the southern US. It’s from the New Orleans area of Louisiana, or that’s where it was made popular.

    Jambalaya is not a south american dish lol.. its from the south of the U.S but its actually a creol / Cajun dish, its a fusion of cultures, french,African/spanish

    A Quorn version should work just fine! Otherwise, some veg like peppers or mushrooms may work well?
