    WOW!!! I thought my MIL made this up. Hubby showed me how to make this. I just make it with corn tortillas, eggs, salt/pepper and oil. My husband likes to eat it with ketchup. Doing this for over 29+ years, and that’s just me. Maybe MIL learned from Abuela?

    This looks so good! The only thing I am not clear on is your spices. Do you have a recipe or substitute for them? Also, I am amazed at the enchilada recipes that doesn’t cook the meat in a sauce to flavor it. It really makes it so much better. Thanks for the video! I am now a subscriber. 🙂

    I respect your comment because many people will just give you a thumbs down without having the guts to put a face on their opinion. I have lived in Mexico and think this is a great recipe for Enchiladas. But what I think is good and you think is not so good is just a matter of opinion . I will give you the Pepsi Challenge do a video on how to make Mexican Chicken Enchiladas and if it is better I will put red lip stick on my lips in my next video. Go Girl if you can.

    Well it depends on how much time you have. Slow cooking the Enchilada sauce after the chicken is removed is the preferred method. But the most important thing is to reduce your sauce so that it has the constancy of tomato sauce, and not to soupy. Also you may want to try cooking these Chicken Enchiladas and judge for your self how long too cook the sauce, just remember to get the thickens of the sauce right. No need to be nervous . I would love to here from you how they turned out!

    My recipe for Chicken Enchiladas includes making a homemade Enchilada sauce too. I have another video on my channel that shows in detail how to cook Enchilada sauce you may want to watch. But to answer your question cook the chicken in the sauce for two reasons one, it will flavor the chicken; and second it will make a outstanding enchilada sauce. So if you want to learn to make the best Enchiladas use my method, and you will find you have cooked some real Mexican Enchiladas!

    Also, it says on the site to boil the chicken stock after removing the chicken for an additional hour…but here it says only for 20 minutes… 🙁 Sorry, but I’m very new to cooking and I’d just like to make sure I do it correctly.

    On your site it says to first boil the chicken in water, and THEN add the tomato sauce, but here you just boiled the chicken IN the sauce and water. Does it matter which way you prepare it?

    I’m totally new to cooking, and cooking chicken always makes me nervous, so I want to be sure! 🙂
