Hi Vishal, I use a knife called Global. I absolutely love this knife. Any decent 8 inch chefs knife should do the trick as long as it’s sharp. I have a store on my website if you want to check it out.

Although my other half is partially Hawaiian, she is not a big fan of pineapple, so I guess when I make these… she’ll just have to watch me enjoy them alone… haha! Actually, she’ll probably be busy enjoying/sharing a similar version of this, which we usually make… shrimp bacon wraps, or water chestnut bacon wraps. Pineapple is a great idea for these! Thank you! If you are referring to the broiler pan, no you can use a pan with sides, so the bacon fat has somewhere to go, and a rack, such as a cooling rack and that would work. It would be great to keep the pineapple bites off the fat that collects. If you don’t want to use a rack, I think maybe it would work to just drain very well on paper toweling after they are done and that may work, too. Thanks for watching. Have a great Saturday.
