    Start with 8 hours. If it still looks moist leave it in a few more hours. The great thing about it is there really isn’t any way to go wrong other than not leaving it in long enough.

    The Nesco Model # FD-37 (400 watt) only has an on/off switch. Do you still figure 8 hour dry time on a #4 cut? Thanks again for your input!

    Congrats on the Nesco! You will have fun with it. I don’t see a issue with leaving it overnight heck it may tenderize the meat a bit as well. Thanks for checking in.

    Hey Wingman> Great KISS recipe. My last 2 attempts at “smoked” jerky were less than favorable for my palate. Everyone else like the result but me. Question: Do you think an overnight marinade on your ingredients would be too much, salt wise?

    Bottom Round is the bottom hind quarter of the cow. As for missing any ingredients you can use anything you like I use some soy sauce with brown sugar you could skip the liquid smoke all together and then just add your spice’s to taste.     Hey Wingman, I have a couple of questions:

    A: Can I use a substitute for the liquid smoke? I live in Australia, and it’s very hard to find.

    B: Can I use a thick sauce, like a honey soy marinade? Will that work?

    C: I really like garlic, would I be able to mix garlic powder in with this, and if yes, how much would I put in?

    D: And when you refer to Beef Bottom Round steak, what is that? Is that what we Aussies call rump steak?

    Hey wingman, I’m not sure if you have ever had wild bills jerky but that is my favorite. It’s more of a dryer more savory flavor. This recipe looks more like a moister more sweet jerky, would you say that’s about right?
