    Don’t throw away the carcass and dark meat. Throw them into a pot with some chopped onion, a carrot, root cellery, parsley and black pepper corns. Bring to a boil and simmer for a couple of hours. Pour stock through a strainer and discard solids. You can save the meat, if you like. It makes nice chunks in a chicken soup.
    You can skim the fat off the stock once it cools down. This is the best chicken stock ever!
