The noodles she used are what I grew up eating in a greek household and saw others use too…. the length of the pasta doesn’t really matter anyways as you cut in square slices anyway.

KEFALOGRAVIERA by DODONI IS GREAT…THE HARD , MORE AGED CHEESE. CAN BE FOUND ON THE INTERNET..IN THE US PARTHENON FOOD CARRIES A VARIETY OF GREEK PRODUCTS. THIS CHEESE RESEMBLES ASIAGO-PARMIGIANO…BUT EVERYTHING IS BETTAH WITH FETAH:))))

Her ACCENT IS PERFECT..A FABULOUS NEW YORK CITY ACCENT;) FURTHERMORE, DIANNE DESERVES KUDOS- EYGE- FOR PROMOTING GREEK CUISINE AROUND THE WORLD, ESPECIALLY IN THE USA, WHERE GREEK FOOD IS STILL CONSIDERED “ETHNIC. ” CHINESE FOOD OR THAI ARE HOUSEHOLD ITEMS…THERE WAS A COMMENT, HERE: “WHAT KIND OF CHEESE?” FOR KEFALOGRAVIERA…DIANNE & MICHELLIN STAR CHEF MICHAEL PSILAKIS, ALSO FROM NEW YORK CITY,
WORK HARD @ INCORPORATING GREEK FOOD INTO THE AMERICAN KITCHEN, BRINGING IT INTO PAR W/ ITALIAN.

The Recipe is good for the Americans, but this is not a true Authentic Greek Traditional Pistacisio…This is an easy version, For starters this is the wrong type of pasta.. This tubular spagetti style pasta is not the correct noodle… You should atleast use a wide ziti type of noodle.. not a spagetti type.. but thats what your version of it…
