    The hallmark of a good cook is to embellish. Take something and improve on it. I like the attitude. Who cares if they add methi in Kerala or not. If it enhances the taste it goes in the pot. Good job.

    The regular ingredients we use in Kerala cooking are a complex mix of flavours and have great depth. Just because you are used to them, you don’t think so. Have you tasted some of the bland cuisines that are out there?

    And you forgot an essential ingredient—-curry leaves. You must have those for any true Kerala fish curry.

    This is a good attempt at Kerala fish curry. The fenugreek seeds are definitely sometimes used in Kerala fish curries. Garam masala-no. We use turmeric powder, chili powder and coriander powder individually. Garam masala sometimes has cinnamon and cloves, which takes away from the Kerala flavor.
