    Chef john just to let you know, satay is not thai, it’s indonesian. Use kecap manis for your satay

    You will not get the fond in the pan with non-stick.

    Tried this yesterday. First time since the beginning of Chef John’s channel that I’ve cooked a recipe of his. The gravy was fucking out of this world. Didn’t have chipotle here in Australia so used some cajun seasoning instead. Awesome stuff!

    Couple questions.
    1) what chicken stock do you like to use? home made, already made store bought or bouillon stocks?
    2) Would it be a good idea to soak the chicken in brine for a while?
