Chef John, a suggestion: your sweet potato will need to cook for a longer
time than the green thai eggplant which should remain a bit firm-tender,
even a bit on the crunchy side. So they might be added after the potatoes
are more or less done. If using long purple Chinese or Japanese eggplant,
use your own judgment, because these have their texture that is entirely
different from these very specific type of striped Thai eggplant bred for
“crunchy” texture.

This curry in Thailand is called,” Kang Kee-ow Waan” or Sweet Green Curry.
( I tried my best to type this in a way that is easy for foreigners to say
it properly). The fish sauce is called “Nam Pblaa”

This was amazing! I couldn’t find the red curry mix so I ended up making my
won but it was still delicious. Might have to find that mix to compare how

made it, ate it! loved it! very spicy! but next time ill try not put so
much ginger just gonna let that out and less jalapeno lol my dad took a big
bite of a piece of ginger thinking it was a potatoe lmao!! his face was
