    I rather leave the skin on the egg plant, it is full of vitamins, plus I
    like the taste. If you think frying it is too oily, if you first put it dry
    into an oven for a while and heat it, it won’t absorb as much oil as just
    frying it cold. I also like to add a slice of ginger during the stir fry.

    个人觉得吧,可以参考咕老肉的方法。 挂糊炸两次,等汤汁收浓后再下茄子,这样就不那么油腻了,也能吃到茄子特有的清香味。
