    I find one should never mix yeast to be ready with anything metallic. Use glass, wood, your hands. A pinch of sugar or a drop of milk can feed it to bloom more quickly. I think if you did not use the yeast here, you’d need baking soda and a pinch of salt but it just wouldn’t be “alive.”

    The yeast will make them spongy, i haven’t try without it, you might try and let us know how it tastes.
