    Blanching does two things. 1: It keeps the nice green color. 2: It gives
    control of cooking time. That way the meat is almost done add in the pre
    cooked veg mix and your done. If you do not care about those 2 things then
    just add the veg when you think the timing is right.

    What is the reason for blanching the broccoli I really do’t understand why
    people do that as I want my broccoli practically raw and crunchy?
