    My daughter Serenity gave me a whole bunch of kale. Hilah, sweet darlin’
    sister Texan, showed me how to make it edible for people; the words I wrote
    about kale that a zillion people read doesn’t haunt me so much now. Got a
    chicken to spatchcock. Came HERE, even as the crew was hooking up the
    Internet. I can manufacture my own charcoal,,but Hilah should be required
    viewing in every school in America. She’s real, and for real, and she cooks
    REAL food real good.

    Any game bird or poultry, poussin, whose back bone is removed, (for ease of
    cooking), flattening it (butterflying it) is said to be spatchcocked. Or
    even spattlecocked. I learnt a new word today…spattlecock. har. not play
    badminton with.

    Our neighbourhood food store sells spatchcocked poussin. How boring! It
    takes fun out of prepping! I’d rather do like you do, Chef. Except not so
