    I know that trout is long gone (I’m replying 3 months after your comment!)
    but I wanted to let you know that you can use anything that will stay firm
    in a hot soup- perhaps kale, chard, or some mandelbar spinach- any sturdy
    green will do. I’m probably going to substitute kombu seaweed and dried
    kelp I can get at my local Asian grocery for this soup.

    You didn’t incorporate the head in the dish, other than for ‘flavor’. WEAK!
