I have been looking at Pad Thai recipes for years online, and this is by
far the best, it also explains the science behind the food. I hear that
one can make their own Pad Thai Sauce easily and when I look at the recipe,
it is too many ingredients. Your tips on boiling the noodles is also very
good.
And you present stuff very well as well. Many thanks and I look forward to
your other recipes.

You could, although lime juice would probably be better. I’ve done it with
a combination of tamarind & lime juice which was pretty good, but never
tried lime juice alone. Let me know how it turns out.

Shrimp paste (if we’re talking about something called “gapi”) and dried
shrimp taste quite different actually, because shrimp paste is fermented.
You could, however, use shrimp fat (orange oily stuff sold in a glass jar,
and sometimes also labeled as shrimp paste).

Thanks for this – yummy! Would using shrimp paste instead of dried shrimp
be okay? Dried shrimp I have kind of gross me out, they smell bad and they
have beady little eyes…and there was a tiny crab in with them lol. I’d
rather use shrimp paste if possible – more appetizing.

@smgr Hi, if you have to use soy sauce, you can use it, I would also mix it
with some oyster sauce to get that seafood taste. Instead of tamarind, you
can use lime juice. I do this at my restaurant for people who are
vegetarian and they don’t wanna use fish sauce. It’s not the same, but it’s
good 🙂
