    My family enjoys chiles rellenos in a flour tortilla and sometimes with some beans in it and eat it as a burrito also you can steam them in a plastic bag which is what my mom does 🙂 btw love your recipes!

    TIP!! Use 2 -3 toothpicks to weave in and out of slit of poblano pepper so that the cheese will stay in it and not make a mess of the frying pan. Remove before eating, of course! Tell guests not to forget to remove it, or you remove their toothpicks before serving. If you fry them open, the cheese will come out and the pan will be a mess of burnt cheese! Also, use a ziplog bag to steam, rather than a paper bag–this works best. I recommend removing all seeds and veins-will still be spicy.

    I agree. Dishes vary greatly not only from region to region, but from family to family. I’m from Tamaulipas and we don’t dip it in flour, either. :/

    Thanks for the cooking lesson but it’s not a real chile rellenos has you probably know. Using a Chile would make it a Chile Relleno.

    I can’t believe that it took me so long to fall in love with these peppers. They are great in a lot of things. Sometimes I simply roast them over the flame and then just wrap them around cheese, or whatever, instead of crackers. I don’t really like bread and crackers, so I’m always trying to figure out ways to get around them. I’m going to try this recipe very soon. One of my favorite dishes.
