    Ingredients are too wet, and the wok is not hot enough to cook the water
    out, everything ends up being stewed instead of stir-fried, the final
    product would be edible, but would lack the caramelized flavor.

    She didnt point out one thing about green pepper corn: If you use the dried
    ones, or those that are jarred in brines, then you would add them towards
    the end like she does. BUT if you use fresh ones, and they are still
    attached to their stems, then you would want to add them first, along with
    the garlic and chili, to fry them slightly and get the maximum flavor out.
    Adding fresh green peppercorn towards the end of the cooking will not get
    them to release much flavors at all.

    wow!! glad to see Thai chef on this.I’m Thai too. ชอบมากค่ะผัดขี้เมา
    พึ่งรู้ว่าต้องใส่น้ำส้มสายชูด้วย ปกติไม่เคยใส่เลยค่ะ
    ครั้งต่อไปคงต้องลองใส่ดูบ้างละค่ะ
