Very nice! Thank you. I had never had plantains until last year, when I decided to finally try “those funny, big, green bananas.” I have tried ripe and green plantains. Your recipe will be my third experiment, and I expect it to be very successful because you explain everything so well.

@Na nay OB; I don’t think it is necessary. I only wash the plantain with the skin before cutting it.So why do you rinse yours?

TV Chefs apart from cooking knowledge should have a positive aura , although Gary has the cooking knowledge, he is so annoying that makes me wanna smack his face every time he appears on TV

he is not patronising in the least – he asks a question so that I (we) might understand why the chef is doing something different to what I might expect – I find this very informative – thanks all concerned

Most people won’t cook “XO sauce” at home. One can buy it in Chinese supermarket or some finer Chinese seafood restaurants.

Gary Rhodes always asks the Chinese chef why he does certain things is because this is a TV show and ordinary people are watching TO LEARN COOKING.
