Certain spices commonly used in South Asan cooking are supposed to be good
for digestion. At least yoghurt was used for the goat curry, not cream
which will make it heavier.
biriyani is persian in origin tho rice came from south east asia the method
of polo(plov,or pilaf) is Iranian in origin,the Mughals are likely
responsible for biriyani in india,and Mughal cooking was heavaly influenced
by persian and central asian food…the biriyani afterall is nothing more
than an eleborate polo there is no shame in admiting that Indian cooking
was influenced by the Mughals and persians,becuas india influenced them as
well
I don’t think the name means all that much to be honest. I’ve heard of this
Sydney restaurant before. It’s closed now, but they offered a variety of
dishes from the subcontinent, that is a combination of Indian, Pakistani
and Bengali food. Both the former owner and this lady chef who used to work
from him are from Pakistan.
