    pasta alla Gricia: Guanciale pepe e pecorino STOP NOT ELSE: Gricia perché?
    Gricio era il nome del norcino, a Roma venivano dal cantone dei Grigioni o
    meglio dai “Gricioni” e d’estate vendevano i cappelli. Stavano in un locale
    in cui due volte al giorno per risparmiare facevano la pasta con quello che
    avevano: Pecorino e guanciale. Perché dai Grigioni, forse erano
    valtellinesi ma a Roma erano i Grici, quindi pasta alla Gricia

    welll.. let’s distinguish the things…: goat’s head it’s named
    “testarella” and has nothing in common with “guanciale” which is pig’s
    cheek. you CANNOT use those both in spite of each other, because they’re
    really different either in flavor and consistance… ciao!
