    Hi Dan what is the oldest refrigerated rice your Mum would use for fried
    rice I mean how many day’s since 1st cooked? 1 day old up to 5 day’s I have
    heard, is that right?

    Thanks for your suggestion for beating the eggs before frying rice. When we
    used to cook fried rice in my dad’s and my grandfather’s restaurant, we
    used to do it your way. Probably not a good excuse, this way we save
    washing one extra bowl… lol. Thanks for your comments and thanks for

    That’s a wrong way to cook the egg,you should have used chopsticks or whisk
    to beat the egg before you cook it,so that it comes in nice little pieces
    within your rice
