I am looking for ways to use up my cornbread. It’s only good one day and
we can’t eat it all. Could I get away with crumbling up the leftover bread
and just put the cheese on at the get go? The cheese could maybe protect
the bread from drying out too much. Your opinion?

Made this for dinner – the taco seasoning, cornbread, the whole dish was
    great!

Robin, I’ve finally figured out what makes your recipes so easy to make.
It’s your running commentary as you cook. You are excellent at describing
what you are doing without mistakes.

You have become my go-to for Mexican Recipes.

I actually made this dish last week and the taste was Oh So Good! However,
I didn’t make enough cornbread for the top. I didn’t notice you have a
cornbread recipe on your site until a couple of days later. I can’t figure
out how to send you a photo of my dish on YouTube so I will send it to you
    on Facebook.

Mama used to call this Tamale Pie and we kids loved it. Pretty much the
same recipe except she added a teeny bit of corn meal to the meat to give
it extra body. I’m droolin’ 🙂

I don’t see why not. I would probably blend it up in a blender first. Try
it and let us know how it worked.
